Highlights

  • Here’s where you can get it or how you can make it at home.

Japanese cheesecake was originally called Souffle cheesecake in Japan and is also popularly called Cotton cheesecake. Although, cheesecakes have a vast variety, this particular variation sure does stand out. What could be the reason, you might ask? This Cotton cheesecake is not only extremely light and easy to eat but it also possesses the original taste and flavour of a normal cheesecake. This makes it fit for everyone as it’s a combination of two very popular types of cake. It is so light that in Japan, it is very common for people to buy themselves an entire Japanese cheesecake just for one person. But don’t worry, if you want to try this delicious Japanese delight, you don’t have to go to Japan. We have listed places around you that serve this exciting cake just like you would want it.

You can also make this Insta-famous recipe at home through these easy steps:

1. 1 cup milk

2. 7 eggs

3. 140 gms cream cheese

4. 80 gms of butter

5. 1 1/2 tsp cornflour

6. 1/2 cup granulated sugar

7. 3/4 cup Maida / all-purpose flour

8. 1 1/2 tsp powdered sugar (optional)

9. 1/2 tsp of lemon juice/ lemon zest

Heat the milk, once it is slightly hot, add butter along with the cream cheese and switch off the flame. Let the butter and cream cheese melt in the hot milk. Don’t cook them in direct flame.

To this mix, add all-purpose flour, corn flour and mix well.

For the eggs, separate the yolks from the egg whites and keep them both aside. Add the yolk to the above ingredients and mix them all well, settle any lumps.

In another bowl, add all the egg whites. With the help of a whisker, whisk the eggs until they form a stiff peak on the whisker. Add the sugar gradually in 3-4 turns instead of adding it all at once.

Bring back the other mix and to that add the meringue (whisked eggs whites) in 1/3 portions, and carefully fold it into the batter with the help of a spatula. You can also slowly mix the both with a whisker manually. Always remember to not whisk fast when mixing the meringue into the batter as that will flatten the batter and squeeze out the air.

Once you have mixed all three portions of meringue into the batter, transfer the batter onto the oven pan. In a pan bigger than the batter pan, fill water up to 1- 2 inches and place the batter pan into it.

While baking, adding the water pan below will keep it airy and will avoid overcooking. Bake the cheesecake at 140 degree C for 40 minutes. And let it sit in the oven with the door open for 10 minutes.

Take it out and let it cool. Sprinkle powdered sugar on the top to garnish.

And you have yourself the famous Japanese cotton cheesecake at home!

Also Note: It is important to follow the steps closely as what really makes the Japanese cheesecake different from other cheesecakes is the technique used in making it. You can also improvise this cheesecake recipe by serving it with various berries and other fruits to make it taste even more delicious! Feel free to add a bunch of blueberries in the baking pan before adding the batter to give your cotton cheesecake a juicy kick on the base. Happy Baking!

Protein-Rich Diet: Potatoes (Aloo) May Provide High-Quality Proteins For Weight Loss And Muscle Strength; Study

Potatoes may prove to be great plant-based source of proteins.

Protein is an important macronutrient that provides strength to the muscles and energy for day-to-day activities. Besides this, protein also helps us feel sated for a long time after meals, and thus, accelerate weight loss process. We all reach for dairy products and animal-based proteins to get our daily protein fix. It’s true that chicken, milk, eggs etc. are great sources of proteins but potatoes, which are always present in our kitchens, are no less. Yes, potatoes or aloo may provide high-quality proteins that can strengthen and maintain muscle power.

A team of researchers from McMaster University discovered potato, which has always been primarily known as a starchy vegetable, can prove to be a good source of high-quality protein that helps to maintain muscle strength. The findings were published in the journal ‘Nutrients’.

Sara Oikawa, a former graduate student in the Department of Kinesiology at McMaster and lead author of the research paper. “While the amount of protein found in a potato is small, we grow lots of potatoes and the protein, when isolated, it can provide some measurable benefits.”

Protein helps in weight loss and muscle building

Since, many people are moving away from animal-based proteins and looking for plant-based substitutes, potatoes can be an excellent choice. To prove this, researchers roped in young women in their early twenties who consumed diets containing protein at the recommended dietary allowance (RDA) of 0.8 grams of protein/per kilogram/day. One group of participants consumed additional potato protein, doubling their intake of the RDA to 1.6g/kg/d. Researchers observed that women who consumed the additional potato protein showed increased rate of protein growth in muscles.

“This was an interesting finding that we did not expect,” says Oikawa. “But it is one that shows the recommended daily allowance is inadequate to support maintenance of muscle in these young women. This study provides evidence that the quality of proteins from plants can support muscle,” said Oikawa.

Five Spice Powder: How To Make The Sweet-And-Spicy Seasoning For An Authentic Chinese Cuisine

Highlights

  • Chinese five-spice powder is basically a blend some common kitchen spices
  • Other than Chinese, this spice is also used in Vietnamese cuisine
  • Prepare this five-spice powder and keep in store.

Let’s admit it, we drool on a plate of spicy Szechuan chicken and hakka noodles. Chinese cuisine is one of the most popular cuisines in India. From a road-side vendor to the fine-dining restaurants, Chinese food is undoubtedly the best-seller! But have you ever thought, what is the secret behind the amazing flavours and taste of the food? It’s the sweet and spicy Chinese five-spice powder; it adds the fresh authentic flavour to the dish.

Chinese five-spice powder is basically a blend some common kitchen spices, mixed in the right proportion. As per food experts, the reason for using this spice mix in a recipe is to incorporate the five main flavours to a dish – sweet, sour, salty, bitter and pungent. However, it tastes best when used in moderation. A traditional five-spice powder is made of ground fennel seeds (saunf), cloves (laung), cinnamon (dal chini), star anise and Szechuan pepper. You can easily prepare this spice mix at home. Here’s the recipe for homemade five-spice powder. Other than the traditional spices that are used in this powder, some people like adding ginger roots, nutmeg, orange peel and galangal to the mix to add a different flavour profile to the recipe.

Other than Chinese, this spice is also used in Vietnamese cuisine and some particular dishes in other Asian cuisines. Five-spice powder is generally used to season fried foods and appetisers, marinade meat and chicken for various recipes and spice-rub for roasting foods. Due to its rich aroma, this powder is also used in few desserts and savoury recipes. It is also said, some of the Hawaiian restaurants use five-spice powder to season the salt they keep on the patron’s table. They dry roast the traditional five-spice powder with common salt in low flame until the spice and salt are well mixed.

So if you too are planning to make Chinese food at home, make sure to prepare this five-spice powder and keep in store (obviously in air tight jar). Happy cooking!
