Lucknow has been a melting pot of culture, food and literature, for many years. On Eid particularly, the city lights up like no other. Chef Meraj Ansari, Executive chef at Four Points by Sheraton, Navi Mumbai recollects some of his fondest Eid memories in Lucknow, “the Zarda, that my mother made, is etched clearly in my memory and it’s something unforgettable and unique. My hometown, Lucknow is renowned for its food culture. Few among the most popular dishes from Lucknow are Seviyan, Kababs and Biryani which have been carried down from generations of the Nawabs. Seviyan is served during Eid, it’s made with sweetened vermicelli cooked with milk and garnished with dry fruits. It is shared with neighbours and friends during the festival as a mark of camaraderie and respect towards other families. Sheer Zarda is also another dish that’s popular during Eid in Lucknow.”

5 Recipes For Eid Festival –

1. Dum Murgh Ki Kacchi Biryani: Kacchi biryani refers to the kind of preparation where raw, marinated pieces of meat are layered with rice, and both rice and meat are cooked together. In this recipe, they are cooked in dum style, thus making for a delectable fare.

2. Zarda Pulao: Basmati rice enriched with flavours of dry fruits, nuts, saffron and rose water. This pulao spells indulgence.

3. Sheer Khurma: Sheer Khurma is one of the signature delicacies of Eid. ‘Sheer’ in Persian means ‘milk’ and ‘khurma’ means’ dates’. To further enhance the milk pudding, vermicelli or sewiyan are added and topped with nuts and dry fruits.

4. Galouti Kabab: The melt-in-mouth kebabs are one of the best things that have come out of erstwhile Awadh, so why wouldn’t you include it in your spread?

Potatoes may prove to be great plant-based source of proteins.

Protein is an important macronutrient that provides strength to the muscles and energy for day-to-day activities. Besides this, protein also helps us feel sated for a long time after meals, and thus, accelerate weight loss process. We all reach for dairy products and animal-based proteins to get our daily protein fix. It’s true that chicken, milk, eggs etc. are great sources of proteins but potatoes, which are always present in our kitchens, are no less. Yes, potatoes or aloo may provide high-quality proteins that can strengthen and maintain muscle power.

A team of researchers from McMaster University discovered potato, which has always been primarily known as a starchy vegetable, can prove to be a good source of high-quality protein that helps to maintain muscle strength. The findings were published in the journal ‘Nutrients’.

Sara Oikawa, a former graduate student in the Department of Kinesiology at McMaster and lead author of the research paper. “While the amount of protein found in a potato is small, we grow lots of potatoes and the protein, when isolated, it can provide some measurable benefits.”

Protein helps in weight loss and muscle building

 

Since, many people are moving away from animal-based proteins and looking for plant-based substitutes, potatoes can be an excellent choice. To prove this, researchers roped in young women in their early twenties who consumed diets containing protein at the recommended dietary allowance (RDA) of 0.8 grams of protein/per kilogram/day. One group of participants consumed additional potato protein, doubling their intake of the RDA to 1.6g/kg/d. Researchers observed that women who consumed the additional potato protein showed increased rate of protein growth in muscles.

“This was an interesting finding that we did not expect,” says Oikawa. “But it is one that shows the recommended daily allowance is inadequate to support maintenance of muscle in these young women. This study provides evidence that the quality of proteins from plants can support muscle,” said Oikawa.

Here’s The Writter Recipe Of Dhaba-Style Egg Curry:

Ginger-garlic paste- 1 tbsp

Green chilies- 4 (chopped)

Coriander- 1 tbsp (chopped)

In a pan, shallow fry 3 boiled eggs with little oil, turmeric and red chili powder.

Separately, heat oil in another pan. Add ginger garlic paste, green chilies and tomato puree to it. Cook it well till oil separates.

Now, add turmeric powder, red chili powder, coriander powder and cumin powder to it. Pour some water and mix it well.

To this, add yogurt and chopped coriander. Cook it for few minutes.

Now, add the eggs to this gravy and simmer it for 3-5 minutes.

Garnish the dish with some chopped coriander and slices of tomato and ginger.

Serve with steamed rice and enjoy!

As per food experts, the reason for using this spice mix in a recipe is to incorporate the five main flavours to a dish – sweet, sour, salty, bitter and pungent. However, it tastes best when used in moderation. A traditional five-spice powder is made of ground fennel seeds (saunf), cloves (laung), cinnamon (dal chini), star anise and Szechuan pepper. You can easily prepare this spice mix at home. Here’s the recipe for homemade five-spice powder. Other than the traditional spices that are used in this powder, some people like adding ginger roots, nutmeg, orange peel and galangal to the mix to add a different flavour profile to the recipe.

Other than Chinese, this spice is also used in Vietnamese cuisine and some particular dishes in other Asian cuisines. Five-spice powder is generally used to season fried foods and appetisers, marinade meat and chicken for various recipes and spice-rub for roasting foods. Due to its rich aroma, this powder is also used in few desserts and savoury recipes. It is also said, some of the Hawaiian restaurants use five-spice powder to season the salt they keep on the patron’s table. They dry roast the traditional five-spice powder with common salt in low flame until the spice and salt are well mixed.
